After shutting my car off, fuel pump seems to keep running for quite a while, especially if the engine isnt completely warm when I turn off the key.
If I remember correctly, isnt this a dead give away for a bad oil PSI sender?

May not be bad. If the oil is cold and thick it will hold oil pressure for a little bit. As long as the oil pressure is higher then the minimum the switch is set for the pump will continue to run.

So its somewhat normal for the pump to run 5ish seconds after I turn off the key?

Yes. See it many times. It's just the oil pressure bleeding off.

I have noticed it more since the new engine.

Clearances are probably tighter so the pressure bleeds off slower.

That's what I was thinking. The factory oil pressure gauge pegs out when the engine is still warming up and 2k rpm. Comes down to around 25-30 warm idle.
