Eisbocks are always high ABV. it is pretty interesting how they are made. They freeze it after its brewed, so the water turnes to ice, and pull a certain ammount out of it.

speaking of a beer post...

My buddy Jerome and I are in the middle of making our first batch of fresh hard cider! he has an apple tree out back and i was able to put my new power juicer to the test! we have about 3 gallons worth fermenting right now in his closet. That was 6 full grocery bags worth of apples!!!

question for the home brewers:
will it be obvious when the yeast "falls out" or when it is done fermenting?

the foamy head is gone but its only been like 4 days Confused

you wont' really see it "fall out", you do tend to see the sediment fall and settle. The real test of its fermentation is to test it with hydrometer. Most of the fermentation happens right away. In beer making, the rest of the fermentation time, is getting that last little bit, and time for the beer to clear.

If you have the original gravity reading, and then take a gravity reading now, you can tell how much fermented. Then take a reading in a couple more days. If the reading hasn't changed, fermentation is done.
