So right now cold I have 55psi and hot it's about 35-40psi. It jumps to around 50psi when I spin her higher, but soon to be shifting just shy of 7000rpm.... is 50psi gonna cut it?!

Some of the pressure springs I've seen to install give me like 85psi cold and 60psi hot!?

55 is probably fine since you wont be sustaining 7000 rpm for long. The standard has always been 10psi for every 1k rpm though.
